  1. Hi Sue!

Congrats on your commitment to yourself and I look forward to reading the blog. I am super happy for you. I thought I would shoot you some healthy, easy recipes that I really like. While putting on weight is not a concern for me yet I can be a super binge eater when it comes to sugar. My entire diet was basically sugar from ages 1-21. I am not sure what your vices are but I feel like when I get a lot of healthy fats I am MUCH less tempted to eat a whole box of fruit roll ups.

These are my go to recipes...feel free to delete this or to add to them....

    Pasta dish
Any kind of round whole wheat (or regular) pasta- anything dense but not spaghetti or linguine something round or spiral
cauliflower or broccoli - i think cauliflower blends in better with little added taste
    peas
some kind of really good red sauce with a little kick
    cheddar cheese

    Boil the pasta to taste
    drain
Stir in pasta sauce, peas, small cut cauliflower ( you can also add some oil or butter first if you like)
Spread the mixture in a bake pan, shred cheese on top
    Bake for 20-30 at 375

I usually make this with some sauteed Collards on the side but I don't know if non southerners like collard greens?!

    Sandwhich
Whatever bread you like that is nutrient rich- not "enriched" which means they take all the vitamins out and put just a little back in...weird!
    Kale
    Cucumber
    Watercress
    Avacado
    Salt, Pepper, Lemon, Olive oil

Start by mixing the kale pieces, cucumber and watercress in a bowl...you can just massage it with your hands a little to make the kale softer
then cover that mixture with a nice layer of olive oil, half lemon juice, salt and pepper and let it sit while you toast the bread
when the bread is toasted cover one side with avacado (add a little lemon, salt and pepper if you like here)
then take the salad mix put in on the sandwich and cover with the other slice o bread! Really good!

    Juice

I think this is the most amazing thing ever! It starts my day off really well so I try to do it every day- Juicing. Granted you have to have a juicer to do this but you can usually snag a good one on Craigslist for less than $100.

You can juice anything but this is what I like and it is a good way to get nutrition without having to eat salads all the freaking time.
    1 small hunk ginger
    5 carrots
    2 apples
    1 orange (peeled)
handful of whatever greens are in the house that are not bitter -usually kale or spinach work well
just put it through the juicer

I also sometimes just juice whatever veggies are about to go bad and sometimes that is really nasty BUT if you want to feel energetic right away (like five minutes after you drink the juice) it really works.

Ok hope you are not annoyed by this email. I just really really like sharing ideas about being healthy so send some my way!

    Much love

    Ashley
